Preparation & marinating: 6 hours to overnight
Estimated cooking time: 40 minutes

Chicken Inasal Ingredients:

  • Pinoy Chicken InasalChickens (free range if available)
  • 3/4 cup Filipino vinegar
  • 1/4 cup Garlic finely minced
  • 2 stalks Lemon grass optional
  • Salt
  • Annatto oil (see notes below)
  • Wooden skewers
  • Spiced vinegar
  • Additional Ingredients Instructions:
  • 2 free-range chickens, approx. 3 pounds each, or if you can find smaller chickens, use 3 of them
  • 3/4 cup Filipino vinegar, palm if you can find it, or cane; or if you must, the equivalent in kalamansi juice (available in the frozen aisle of your Asian market if you don’t have access to fresh)
  • 1/4 cup garlic, minced very finely, or better yet, mashed into a paste with 2 teaspoons sea salt
  • achuete or annatto oil, made by steeping 1/4 cup annatto seeds in 1/2 cup hot oil for half an hour (If not available, you may mix a small amount of paprika and tumeric to achieve the same color.)
  • thick wooden skewers, soaked for 1 hour in water prior to cooking
  • Bottled spiced vinegar for serving, or make your own by mixing Filipino vinegar, lots of crushed garlic, a bit of salt, and a handful of Thai peppers or other tiny red hot peppers

Chicken Inasal Cooking Instructions:

  • Pinoy Chicken InasalQuarter the chickens, or if using the small ones, halve them. Marinate in the vinegar, garlic and salt, several hours or overnight, turning several times.
  • Preheat grill to 350 degrees. Make sure your grill is cleaned and oiled well. Cook over indirect heat for 20 minutes, basting with the achuete oil.
  • Turn and cook for 10-15 minutes more, or until thickest parts of chicken exude clear juices when pierced. Can also be made in a grill pan on the stove if no outside barbecue is available.
  • Serve immediately with the spiced vinegar. Other welcome additions to the vinegar: some soy sauce or fish sauce if you like, or even some minced ginger.

Variations:


  • Another technique we’ve found to work well, is to heat the oil in which the annatto is to be steeped, and to steep the garlic (and lemon grass if using) together with the seeds. This ensures a more even distribution of flavors. Just remember to discard this mixture when you’re done with the cooking, as you risk botulism from the garlic. Or, if you want to make it ahead of time, be sure to refrigerate the oil to retard any toxins from developing.
  • If your chicken is particularly fatty, you could render the fat slowly in a skillet, and use that instead of cooking oil to steep the annatto seeds. In which case, you’ll want to have enough not only for basting but also for serving later, as there’s nothing more appetizing than chicken inasal drizzled with this orange concoction.

Suggestion:
I came here during the late afternoon/early evening time with just 2 of my crew friends Josh and Ariel.  Everyone else from the crew went home or did some other stuff.  After parking my car, makai (ocean) side of the ground level at the mall, I noticed a guy holding a Jollibee plastic bag full of food.  Next, I saw a couple staring a the Jollibee menu posted on the window outside of Jollibee.  After that I saw a line for Jollibee.  It was a medium sized line.  Since I already ate a meal at Waipahu, I figure I try their Banana Jackfruit (Banana Langka) which appears on their menu next to the Peach Mango Pie.  The sectional beezyness was about 70 percent.  It was quite busy for them by the time I came over.  By the time I ordered, they mentioned that they do not have the banana jackfruit pie yet.  I was bummed so I just ordered a peach mango pie.  Josh also took some coupons.  He will start to frequent Jollibee Ala Moana since he works there too.  A hui hou, until next time.

Double check the safety harnesses for the tubing.Fifth, make sure the back door has an alarm that is properly working. make sure every manager that runs a shift has a key to this alarm.Sixth, check all locks and ensure all managers have keys that work properlySeventh, make sure all lights are working in the parking lot and are turning on at the correct time.There are more I could go on but, you get the point. There should be a checklist everyday they go through and varify all things are in order. Also a Safety Commitee is a good idea. Everyone could be assigned certain tasks that need to be completed and checked up on.There are also standard procedures when opening or closing a Mcds store. Make sure all the crew and management knows these procedures and adheres to them.Perhaps you could call the local authorities and have them escort you to the bank for depositing money. Or they could be there when you open or close the store.

suggestions:Even if I love the foods here, I really don’t like their customer service because every time we order for take out, it really takes 15 to 20 minutes for it to be served to us! It happened to me couple of times especially in Anonas branch! Yesterday, I was really hungry and I want to eat their beef siomai with their famous Yang-chow rice (it is fried rice). There were not lots of customers at that time since it is already past lunch. Before it was my turn to give my orders, a lady interrupted us looking for their manager complaining that she has been waiting for almost 20 minutes but her order wasn’t even taken place yet. I was thinking that maybe she ordered a lot but I heard that she just ordered for their Nai-cha (it was a Milk-tea). Wow! That was really long for just a drink like that.I was so hungry so I never thought that it would happen to me, I just told them that I want a Nai-cha drink, Yang-chow fried rice and a beef siomai. I clearly told the lady that my order was “take-out” twice just to make sure. So there I waited for 10 minutes but still nothing. I followed up my order then after another 5 minutes, they served my food. I was really angry because they thought that I was going to eat it there!Much to my surprise their manager who is a big, tall man made a face to me! He said that I need to wait for another 10 minutes because they need to pack my orders. I told him that I will report them to their main office and he immediately went to the kitchen then after few minutes, he was able to pack all my orders! I just don’t know what is wrong with the people working in that branch.That is the only branch that really offers bad service to their customers! I go inside happy but when I go out, I am mad Not a good customer service!

suggestion:I like this hub for two reasons. First reason being that I like food, in fact I love food. And the second reason I like this hub is that it tells me about food in philipines in particular it tells me about fast food in Philpns. ( I can't spell philipines at times.) sugggestion:This is nice one! Since you do this very well, I'd like to bring to your attention other restaurants of superb services and offers. I know, they are my favorite hangouts! suggestion:Interesting twentyfive to learn about new food haunts in foreign countries to me. I would love to try the phillipine style barbecue at Mang Inasol. Interesting to note about Mcdonalds,in many countries they fail miserably profit wise due to them forcing all franchisees to purchase their food only from the American food distibutors they operate. This practice has in some places made the price of a Big Mac and other sandwiches go through the roof

nivea_for_men_small-teasersuggestion: I’m generally fair in my own way. I don’t like to tan. I don’t wear sunscreen except for the SPF on my face from bbcream and lotion (I know this is bad, but meh). Occassionally I used the Silka whitening lotion Ramille got me if I know I’m going to be out for a sunny day (eg. photoshooting). Having said that, the lotion is only SPF6, but I haven’t gotten any darker at all.
